Greek-Style Ravioli

One of our favorite wedding presents was a subscription for Cooking for Two, a Taste of Home publication designed for households of couples and singles looking for fast, simple and yummy recipes. All of the recipes are submitted by their faithful readers and there's quite a few of em that have become big-time favorites on our dinner table including this Greek-Style Ravioli entree.

It's sooo easy, quick and delicious - which are usually the top three requirements for a meal I'll prepare when I'm exhausted from a full day of work and being a mom to an increasingly active little munchkin!

(PS - I've adapted this recipe to make servings of four - because we love to have this ONE as leftovers for lunch)


Brown 3/4 pound of hamburger. Once brown, drain fat.

 Add a can of tomatoes and a dash of oregano, parsley, basil and garlic. Mix it up! Meanwhile, cook 10 ounces of refrigerated cheese ravioli in boiling water.

Add 2 cups of fresh spinach, 1/2 cup of feta cheese and 1/2 cup of black olives (omitted here, but usually I'll add em!)and ravioli to hamburger-tomato skillet. 

Mix and warm until feta is just a bit melty.
Pair with some cheesy garlic bread on ciabatta bread and ENJOY!
