Easy Cheesy Enciladas: Recipe #1 from Ready Set, Eat!

The blogosphere has spoken ... and I will be cooking 10 amazing recipes from the Gooseberry Patch's Ready, Set, Eat! cookbook in the next several weeks! I am so excited to share with you our family's favorite recipes from this fun cookbook as part of the Gooseberry Patch and The Real Farmwives of America and Friends "In the Kitchen" series! And don't forget after I cook up the 10th recipe, I will be giving away a second copy of Ready, Set, Eat! to one very lucky reader! Yahooooo!

Start your engines ladies and gents, we're clear for takeoff ... Ready, Set, EAT!

First up is this yummy and super Easy Cheesy Enciladas recipe!



Ingrediants: (Recipe makes 2 pans - eat one and freeze the other!)
3 pounds of ground beef
2  - 1 1/4 oz. packages of taco seasoning mix
1 to 1 1/2 cup of water
16 oz refried beans
2 packages 10 inch flour tortillas
Can of cream of mushroom soup (10 3/4 oz)
Can of cream of chicken soup (10 3/4 oz)
2 cans of tomatoes with chiles (10 3/4)
1 1/2 pounds of pasteurized process cheese spread - cubed

Brown ground beef over medium heat, drain

Add seasoning mix and water. Add beans, cook for an additional 5 minutes.

Combine remaining ingrediants in a medium saucepan. Cook over medium heat until cheese is melted.

Once beef mixture is ready, spread down center of tortilla, roll up and place in greased 13"x9" baking pan.

Spoon cheese mixture over enciladas. Cover with alumnium foil and freeze or bake at 350 for 15 minutes until bubbly!


Serve with rice, garnish with green onions and/or sour cream and dinner is SERVED!
