One-Dish Cornbread Meal: Recipe #3 from Ready, Set, Eat!

I LOVE cornbread, oh lordy especially with chili  ... so when I found this recipe in my Ready, Set, Eat! cookbook from Gooseberry Patch, I wanted to give it a try. I have to admit, though, we're not a big casserole kind of family, so I had some hesitation. I think it has something to do with all the ingredients being all mushed together - and sometimes you don't know what all is in there and well ... I like to know!

But now this one-dish dinner, it may have just shifted my opinion on the ol' casserole classic. It was absolutely delicious and I highly recommend it, especially if you love corn bread!

One-Dish Cornbread Meal

8 1/2 oz. package of cornbread mix
2 eggs, beaten
14 3/4 oz. can creamed corn
1/2 cup milk
4 oz. can chopped green chiles
1 lb. ground beef, browned and drained
1 cup shredded Cheddar cheese

Mix together cornbread mix, eggs, corn, milk and chiles.                              

Brown hamburger and drain fat.

Add ground beef and cheese to mixture. Pour into an 11"x7" baking pan sprayed with non-stick veggie spray (I like to use Olive oil spray, myself).

Bake at 375 degrees for 40 minutes or until golden. The recipe says it serves 4 to 6, but I had so much left over - I think you could actually serve up to 10- making it a great choice for your next potluck!

  5. This is one of our favorite quicky meals. However I use sausage instead of hamburger. Yummy!
