Once upon a time ... fairytales do come true!


Guilty. Yup, you know what I AM excited for the Royal Wedding on Friday. Go ahead shake your head. I realize in the scheme of world events occuring at the moment - that the wedding of Prince William and Kate Middleton is relatively unimportant.

But this wedding is going to be fabulous - I mean really - I absolutely cannot wait to see Kate's dress. But honestly, I am sucker for a good wedding. I love to see the bride walking down the aisle, the groom's face as he takes his vows, the cake, the decorations and of course the excuse to shake my groove thing a little on the dance floor.

By the way did you see this Royal Wedding spoof - hilarious!

Do you remember the gorgeous pagentry of Prince Charles and Princess Diana's wedding? The 20 foot train ... omg!
Yes, I am too young to remember. In fact, I wasn't even born yet. But growing up, I was in love with Prince William - back when he had hair and was every young girl's dreamboy. I may have had a poster of him on my wall. Guilty again. Have I mentioned that I was boy crazy at one time? 
Am I jealous that he is now engaged to be married - of course not. Because Kate looks like a sweetheart - I mean I think if I was royalty - we would be friends. She is gorgeous, but also seems down-to-earth and sweet as a button.

So I am I getting up at 4 a.m. on Friday morning to watch the Royal Wedding? Whelp, I haven't decided yet. For sure ... DVRing it, but on the other hand, Baby RayRay usually wakes up at 5:30 a.m., so what's an hour or so earlier. I don't know we'll see -  I do love my sleep - and I'm not really THAT much of a diehard. If I was in college - you betcha! And I'd probably throw a party too. It's a great excuse to squeeze back into my old prom dress and sip on some mimosas!

Baby's First Easter

Easter is one of my absolute favorite holidays, and this year of course it was extra special since it was Baby's First Easter! Unfortunately, though, everyone in my family has been sick - starting with me. Last week - I was outta commission for two days from work. Then Baby RayRay came down with another cold on Thursday (just confirmed from the doctor she also has an ear infection), then Big D on Friday. Good thing my momma arrived on Friday to take care of us all! Thank goodness for moms!

When Sunday rolled around, though, I was a bit worried about going to church because I didn't want to infect everyone. But I simply can't miss Easter service to celebrate the true meaning of the holiday - the resurrection of Christ.

So we sat in the front pew - no one comes close to sitting in the first pew most of the time- so we felt safe from infecting the congregation there. But a funny thing happened as Big D was taking his Easter communion - somehow he grabbed the wine glass and it flipped out of his hand throwing RED wine down his shirt, inside and down his pants. It was a bit comical at the time as I watched the fumble go down - but later a bit frustrating as I worked to unsuccessfully get the stains outta his shirt and pants.

What's your secret to getting red wine stains out?

We returned home to the farm and whipped up a delicious Hoosier Easter feast fit with yummy smoked ham, baked red potatoes with rosemary, couscous salad with cucumbers and chickpeas, green and yellow waxy beans and finished it off with my Goody Brownie bars and yellow peeps, of course for dessert. I didn't take any photos of the dinner - ugh I should've. It was so delicious we all mauwed it down before I could snap some shots!

I can't wait for next year though when Baby RayRay will be old enough for an Easter egg hunt and photos with the Easter bunny! When I was growing up, after we came home from early morning church, we also had a scavenger hunt for our Easter baskets. Fun memories!

Two girls and a baby in Cincy!

I love to travel, whether it's a day trip to western Ohio, a weekend in Louisville, a week in Washington, D.C. or a mission trip to Germany. So when Baby Ray Ray joined our family - clearly she would be a part of all of my little adventures. And course, it would be super easy and a wonderful opportunity to create new memories as a family. Whelp ... the memories part is right on, but the "super easy" part is not completely true.

At least not in my most recent experience to Cincinnati, Ohio. I have been wanting to go to IKEA for I don't even know how long. So when my bloggy pals, The Real Farmwives of America and Friends roadtripped to Ohio to see The Pioneer Woman, making pit stops at IKEA and Jungle Jim's International grocery store in Cincinnati - I wanted to go even more! So I made plans with one of my very best gal friends B to spend a Saturday in Cincy! I was pretty psyched for our girls' day, I'm not going to lie!

I woke up and got rolling Saturday morning - running about an hour behind schedule. I'm always running behind - fashionably late, right?! Every morning - it takes at least 2 hours to get on the road. I had no idea that having one baby would add 1 hour to my morning routine. I sure hope it isn't 1 hour for every child - because if we have three kids that would mean I'd have to get up at 4 a.m.

Once I drove to Connersville to pick up my friend it was close to 12:30 p.m., we got on the road and of course 30 minutes in - RayRay woke up and wanted to eat. So we stopped for 30 minutes in some po-donk town in Ohio and I fed her in the back seat. We are almost to the point where I won't be able to nurse her in the car anymore because she's getting so big

So then we get on the road again and by this point - my gal pal and I are getting the hungries. So we stop at Chipotle in Cincy and eat a little grub. RayRay is still sitting chill in her little carseat. She is such a good little traveler - she really is!

Ok - so now it's about 2:30 p.m. and we find a parking spot at IKEA near the front, score! I figured since RayRay was in the car all afternoon she would like to get out and be held.

So I had used this Moby Sling Wrap at home before - I brought the booklet and picked out a wrap that I thought she would like. I don't have a particularly large car, but I was able to wrap myself up in the Moby and together my gal pal and I slide Miss RayRay in the sling. Alrighty ... good to go, right? Well, literally as we entered the lobby of IKEA, I noticed RayRay and the wrap were ever so slightly sliding down. My friend lifted her up and I tightened the wrap. Up the escalator to the showroom we went and RayRay is still sliding down. We made the mistake of not bringing the stroller in the store. Big mistake. We tightened the wrap again. It's not working very well. I'm getting a little frustrated at this point.

Eventually (about 10 minutes later), we give up on the Moby wrap and decide to just carry RayRay. Well ... RayRay weighs about 20 pounds now - that's alot to lug around no matter how you slice it.

About 1 1/2 hours after arriving, I think my arms are burning and I just can't bear to burden my gal pal with my 20 pound munchkin - so I decide to walk back out and get the stroller. Well ... IKEA is huge if you've never been there before - so it felt like I walked 5 miles just to get out the store and to the car - then another 5 miles in. Ugh ... exhaustion is starting to set in at this point. So I get back in the store and RayRay has her stroller to ride around in and I have feeling back in my arms.

Then about 30 minutes later,  RayRay is hungry again. Ok ... so now I've got a screaming child in the middle of the store. Awesomeness. I go on the hunt for a restroom, a chair, bench ... something. I made the second mistake of leaving the stroller with my gal pal and carrying RayRay with the diaper bag strapped across my shoulder during my hunt for a place to nurse. Again, big mistake. I give up and head for the front of the store where I remembered there were some nice chairs. Again, it felt like it at least a 5 mile walk. Since I'm carrying RayRay - my arms and now, legs are burning ... and I'm sweating because I'm pretty sure IKEA had the thermostat set at 85 degrees.

I finally get to the front of the store and RayRay is basically balastic at this point. In addition, I'm sweating and becoming growingly exhausted. Clothes are flying as I try to get things under control to nurse my screaming munchkin. I'm sure I probably flashed a few folks in the process. But at the time, I was so focused on RayRay - I could've cared less about a boob being exposed for a second.

Ahhh ... now I can relax for a minute. All is right in the world again as she is content to nurse her heart away. Then ... she falls asleep. Crud, I don't have the stroller! So I walk with a 20 pound sleeping baby in my arms about 5 miles back into the middle of the store. I get to the lights where my gal pal B and I agreed to meet and no sign of her. I'm beyond exhausted now. I give up and sit on a stack of floor lamp boxes. I'm thinking to myself if I break these lamps I don't even care - I'll just buy em if I have to. I'm able to get my phone out of my diaper bag without waking RayRay in my arms and text B to let her know where I am. I find out she is upstairs. Since I don't even know where the stairs are, I tell her to come down and find me. Have I mentioned IKEA is huge. It felt like it was 20 minutes later I see B and the blessed stroller. I lay RayRay down and of course she wakes up and started crying again.

B and I give up on our IKEA experience and check out. I made a couple great finds though such as the two new bedside lamps I bought for $5! Believe it or not, it's about 6 p.m. now. And we haven't even stopped at Jungle Jim's yet. I may be hot, tired and exhausted, but I'm not giving up just yet. I load and then un-load RayRay from the car and we make a quick stop at Jungle Jim's.

I'm starting to worry because I didn't bring any dindin for RayRay and she usually eats around 7. So since Jungle Jim's is a grocery store - I pick up something and now I feel a bit more prepared. I also found some yummy Gouda cheese from Switzerland and some German cheese and dark chocolate to satiate my love for both cheese and chocolate! Back on the road again for a 2 hour drive and RayRay falls asleep in the car. Ahh yes a swee sleeping baby! We arrived at the farm a bit after 9 p.m. and RayRay and I are both pooped. No better word to describe it. Thank heavens for Big D as he had dinner waiting for me when I rolled in.

 What did I learn from this experience - that what used to be a day trip should probably be a two-day trip now if RayRay comes along for the fun. To always bring the stroller in and never plan to carry the munchkin everywhere - my arms aren't built for marathon baby carrying.  Ahh ... it was a good time overall, but exhausting is also another word that comes to mind! Since the day was so crazy - I took zero photos - I know - I'll be better next time!

Brownie Goody Bars

Need a yummy crowd pleaser for dessert, tonight?! These simple Brownie Goody bars are just the trick! It has everything delicious and downright devilish that you're looking for in a dessert including brownies, vanilla frosting, peanut butter and of course chocolate! ;)


Ingrediants:
1 box fudge brownie mix
Water, Vegetable oil and Eggs called for on brownie mix box
Vanilla frosting
3/4 cup salted peanuts, coarsely chopped
3 cups rice cereal
1 cup creamy peanut butter
1 bag (12 oz) semisweet chocolate chips

Directions:


Heat oven to 350F. Grease bottom of 13x9 pan.

Mix brownie mix, egg, water and oil until well blended.



Bake for 20 minutes or until fork is clean 2 inches from sides.
Once completely cooled, frost the top of the brownies.
Since I used regular peanuts, I took a rolling pin to turn them into crunchy bits.

Add peanuts to frosted brownies. Meanwhile, melt peanut butter and chocolate chips over low heat.
Stir constantly until smooth.

Add peanut butter/chocolate mixture to 3 cups of rice cereal. Spread over frosted brownies.
Refrigerate for one hour or until set before cutting into bars.

Working for the weekend, baby!

So check it out ... I am a guest blogger today at my good friend and fellow Real Farmwife of America  - Miss Heather's blog - 3 Kids and Lots of Pigs! So honored to be invited to be a part of her amazing Farmer Friday series! Heather you rock - so lucky to call you a fellow farmwife friend!

It's been one of those weeks. You know. We've all had em'! I just look at everyday as one day closer to the weekend. It could be because we (I) haven't really taken a vacation since March of 2010. Yes ... you heard me right. It's no joke. There was of course the maternity leave in late summer - but as all of you know that was far from what I classify as a vacation! TGIF that's all I have to say and I've been saying that alot lately!

Get this though ... so I was driving to the office today and a great song came on the radio - that is really sort of my anthem for the week/month/year. I love, love, love my job don't get me wrong. But I get excited too about the weekend and spending some quality time with my baby girl (and Big D too!). Work hard, play hard (but now I'm playing with baby toys)!

Wordless Wednesday: Laughing at Uncle Willie!

Last weekend, Big D, Baby RayRay and I visited Grammy and Grampy (my folks) in Ohio again. We also ventured to the farm where my milking cows are housed (post on this later!) so that we could bring home two dry (or non-lactating cows) and a new baby heifer. It was a beautiful weekend and we had a great time!

When we returned home on Sunday, we also got to spend some quality time outside with Grandpa and Gramma (Big D's folks).

The weather is warming up and I am loving spending time with my loved ones in the sunshine!

Hunk of Meat Monday: Spicy Sausage, Tomatoes and Bow tie Pasta

Big D is a meat and potatoes kinda guy, while I, on the other hand, love a warm and rich pasta dish with a side of leafy greens. So we often compromise and I whip up a meaty pasta dish with a leafy green salad. This weekend was no exception.  And an added bonus ... we used sausage made from hogs we raised right here on the farm. I think they call that the fruit of your labor!

This recipe was adapted from one I found on http://www.allrecipes.com/

Ingredients
1 (12 ounce) package of bow tie pasta
2 tablespoons olive oil
1 pound Italian sausage (casings removed and crumbled)
1/4 teaspoon red pepper flakes
1/2 cup diced green onion
3 garlic cloves, minced
1 (28 ounce) can diced tomatoes
1 1/2 light whipping cream
1/2 teaspoon salt
1 teaspoon parsley
Directions:
Heat oil in a deep skillet over medium heat. Cook sausage and pepper flakes until the sausage is evenly brown. 

Meanwhile, bring a large pot of water to a boil. 

Stir in onion and garlic. Cook until onion is tender.

 Cook pasta in boiling water for 8 to 10 minutes or until al dente.



 Stir in tomatoes, cream and salt. Simmer until mixture thickens, 8 to 10 minutes.

Stir cooked pasta into sauce and heat through. Sprinkle with parsley and voila, dinner is served!

Prep time: 15 minutes Cook time: 30 minutes. Ready In: 45 minutes. Serves: 6
